A lovely stir-fry that provides all the colors of the rainbow in a vegetable and sausage smorgasbord of delightful tastes, textures, and sensation.
Ingredients
- Smoked sausage – approximately one pound – chopped.
- One bell pepper each of the following colors: red, yellow, orange, and green. Sliced finely.
- Asparagus – chopped in about one-inch lengths.
- Mushrooms – sliced – lots.
- Onion – chopped. A handful.
- Rice. Cook enough for about 4-6 servings. Any type you prefer.
- Olive oil, fresh garlic, lemon pepper. Go ahead – experiment!
- Fresh Green Salad Fixin's.
- Your favorite dinner roll or bread with fresh butter.
Directions
- Get crackin' with cookin the rice.
- Warm up the bread on low in the oven.
- Recruit table setters, vegetable washers and cutters, and a good conversationalist for company.
- Heat skillet on medium or so with olive oil, add onions and seasonings.
- Add asparagus, bell peppers, mushrooms, and meat.
- Stir occasionally – otherwise leave covered and let steam. But NOT for too long – the desired effect is brightly covered, slightly crisp vegies.
- Serve on bed of rice with salad and bread and beverage of choice.
- Remember to say grace!
