Traditional Frybread

The quintessential Indian food. This recipe is almost as good as Victor's Mom's!

Ingredients

  • 6 tbsp nonfat dry milk
  • 3 cups bread flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 1/2 to 2 cups lukewarm water
  • 1 tsp vegetable oil
  • oil for deep frying

Directions

  1. Mix the dried milk with the flour, baking powder and salt
  2. With a wooden spoon, mix in the water in small amounts, using just enough to make a soft but not sticky dough
  3. Stir in the oil
  4. Knead the dough until it's pliable
  5. Pull off egg-sized pieces and roll them out to about 5 inches in diameter
  6. Fry the dough, one at a time, in a deep pot filled with sizzling oil or in a deep fryer, flipping after a couple minutes, until golden brown on both sides
  7. Drain on paper towels, serve hot
  8. Can be served with honey, cinnamon and sugar as scones
  9. Also, top with seasoned meat, beans, salsa and cheese to make indian tacos
