A traditional Algerian stew – can be eaten alone or over couscous. This is my grandmother's recipe.
Ingredients
- 1 lb lamb stew meat (can use beef)
- 4 Tb butter
- 1/2 cup diced onions
- 1/2 cup diced carrots
- 1/2 cup diced potatoes
- 1 large tomato, peeled and chopped
- 1/2 cup diced squash
- 1/2 cup chick peas
- 3 cups water
- salt
- black pepper
- coriander
- cinnamon
Directions
- Brown meat with onions in butter
- Season with spices – you can always add more later
- Add vegetables, simmer over low heat
- Add water and let cook for about an hour over medium heat
- Add some fine noodles, or serve over couscous
