Tater Tot Casserole

Total junk food. Also comfort food and kid food. Sounds disgusting, tastes really good. Also a one-dish meal, if you're lazy about it and serve nothing else.

Ingredients

  • 1 to 1 1/2 lb. ground beef
  • 1 can cream of mushroom (or celery) soup
  • 1/2 to 1 cup frozen peas (or peas and carrots, or mixed veggies)
  • Frozen tater tots (or reduce calories by using "tater gems", which are slices instead of cylinders)
  • grated cheese (you can omit it, but it tastes so good!)

Directions

  1. Heat oven to 400 degrees F.
  2. Brown ground beef and drain.
  3. Place in bottom of a baking dish (8 by 8 works for 1 lb., but so does a bigger one).
  4. Spread soup on top.
  5. Cover with frozen peas.
  6. Top with tater tots laid in neat rows to completely cover the top surface.
  7. Cover (heavy duty aluminum foil works just fine) and bake for about 40 minutes.
  8. Top with cheese and bake uncovered for 10 to 15 minutes, until cheese is bubbly and starts to brown.
  9. Let cool a little before serving so tounges don't get burned.
