A "family" recipe, meaning I got it from my mom and someone makes it at almost every holiday meal. I don't like parsley, so I don't include it, but everyone else does.
Ingredients
- 1 head romaine lettuce, washed, drained, and ripped or cut into bite-size pieces
- 1 cup celery, sliced
- 1 Tbsp. minced fresh parsley
- 2 green onions, sliced thinly (tops and bottoms)
- 1 can mandarin oranges, drained
- 1/4 cup sliced almonds
- 2 Tbsp. sugar
- Dressing:
- Dash of pepper
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 2 Tbsp. vinegar
- 1/4 cup vegetable oil
Directions
- Heat a pan, preferably cast iron, over low heat. (Remember to pre-heat stove if you have an electric.)
- Place sugar and almonds in pan, and stir until sugar melts and turns light brown. Remove from heat and cool.
- Make dressing: Dissolve sugar and salt in vinegar. Mix in pepper. Slowly pour in oil while whisking.
- Toss all ingredients with dressing just before serving.
