Orange Tossed Salad

A "family" recipe, meaning I got it from my mom and someone makes it at almost every holiday meal. I don't like parsley, so I don't include it, but everyone else does.

Ingredients

  • 1 head romaine lettuce, washed, drained, and ripped or cut into bite-size pieces
  • 1 cup celery, sliced
  • 1 Tbsp. minced fresh parsley
  • 2 green onions, sliced thinly (tops and bottoms)
  • 1 can mandarin oranges, drained
  • 1/4 cup sliced almonds
  • 2 Tbsp. sugar
  • Dressing:
  • Dash of pepper
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 2 Tbsp. vinegar
  • 1/4 cup vegetable oil

Directions

  1. Heat a pan, preferably cast iron, over low heat. (Remember to pre-heat stove if you have an electric.)
  2. Place sugar and almonds in pan, and stir until sugar melts and turns light brown. Remove from heat and cool.
  3. Make dressing: Dissolve sugar and salt in vinegar. Mix in pepper. Slowly pour in oil while whisking.
  4. Toss all ingredients with dressing just before serving.
