I typed this one up when my baby brother wanted to learn to cook for a new girlfriend who was a vegetarian. He doens't do well with "real" recipes (neither do I) so I started sending him "cooking blueprints" instead.
You can also drop a chicken or a pork loin in the middle of this, in which case you should adjust the time and temperature to whatever's appropriate for the meat.
Ingredients
- 3/4 cup olive oil
- 1/3 cup of something acidic (lemon or lime juice, vinegar, etc.)
- 1/3 cup of something sweet and sticky (honey, molasses, maple syrup, melted gummi bears . . .)
- 2 T or so of something green and leafy, dried (rosemary, basil, oregano, etc.) (Can use 1/4 cup fresh, if available)
- 1-2 each of several spherical or elongated oval shaped things that grow underground (carrots, sweet potatoes, turnips, parsnips, beets, onions, etc.)
Directions
- Preheat oven to 350
- Cut the subterranean ovoids into chunks – think two bites per piece – and place in a shallow baking pan
- Mix everything else together and pour over the veggies. Toss.
- Cover with foil and put in oven for 1 – 2 hours.
